Brown rice has become a staple in our  house, but that hasn’t always been the case. Cooking brown rice was always hit or miss- sometimes undercooked and crunchy and sometimes overcooked and mushy. It wasn’t until we perfected the recipe that it became a regular on our weekly meal prep plan.

Why Brown Rice?

When you compare brown vs. white rice, brown rice is superior for nutrient density and healthy benefits. Only the outermost layer, the hull, is removed to produce what we call brown rice. This process is the least damaging to the nutritional value of the rice and avoids the unnecessary loss of nutrients that occurs with further processing. If brown rice is further milled to remove the bran and most of the germ layer, the result is a whiter rice, but also a rice that has lost many more nutrients. Brown rice is a delicious base for some of our favorite dishes- stir fries, buddha bowls, veggie scrambles, hearty grain salads, and veggie sushi rolls. It can also be added to soup and chili to give the dish a bump in nutrients and calories. It’s a convenient side dish and a nutritius yummy afternoon snack when combined with protein and a healthy fat.

Try brown rice with a scrambled egg, avocado and a few dashes of hot sauce and you’ll see what I mean by a yummy afternoon snack.

Honestly, healthier or not, I love the slight nutty flavor of brown rice. I would choose it over white rice even if it wasn’t healthier.

So, do you want to know how I cook perfect brown rice? Every. Single. Time.

  1. use vegetable broth [instead of water]
  2. cook it in an Instant Pot

The cooked rice is slightly sticky and grains are distinct and tender, without being too soft. Using vegetable broth gives the rice a hint of flavor making it good enough to eat alone.

Ingredients

  • 2 cups brown rice
  • 2.5 cups vegetable broth

Instructions

  1. Combine rice and veggie broth in an Instant Pot.
  2. Click Manual and set for 22 minutes.
  3. When cooking time has elapsed, use the 10 minute Natural Release.
  4. Then press [Cancel} and twist the steam release handle on the lid to "Venting" position.
