A delicious and easy to make muffin recipe for a healthy breakfast on the go or afternoon snack. Naturally sweetened and made with whole food ingredients. Make a batch on Sunday and store in the refrigerator for up to a week for a convenient healthy meal and snack option during the week. [Gluten Free, Dairy Free]
Ingredients
- 3 cups oat bran
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/1 teaspoon cinnamon
- 1/4 cup walnuts, chopped
- 1/4 cup golden raisins
- 1 apple, grated
- 4 ripe bananas, mashed leaving chunks
- 1 teaspoon vanilla extract
- 3 tablespoons honey (or preferred sweetener)
- 1 1/2 tablespoons lemon juice
- 3/4 cup water
- NuttZo Seven Nut and Seed Butter
- nut butter
- plain yogurt with vanilla protein powder
Instructions
- Preheat oven to 350 degrees.
- In a large bowl combine the dry ingredients.
- In a separate bowl, combine the apple, banana, vanilla, honey, lemon juice. Mix well.
- Combine the dry ingredients with the banana mixture, add water and stir until blended.
- Pour into lined or sprayed muffin tins and bake for 45 minutes or until golden brown.
- Allow the muffins to cool in the muffin tin 10 minutes before serving.
- Add [optional] toppings right before serving.
Notes
If not serving immediately, store in the refrigerator and warm briefly in the oven or microwave before adding an [optional] topping.

I’ve made a lot of similar recipes using banana and nuts, just not with oat bran. I absolutely love the combination of banana and nut. I would like to make protein squares from scratch.
I have a friend who cannot eat gluten who would really love this recipe. I’m going to share it with her and ask her to make some of these muffins for me too.

These look AWESOME! I love anything with banana in it, but my kids tend to eat bananas so fast we never have ripe enough ones to make anything. Once in a while I will get a few. We are oatmeal people, my kids eat it every day. Sometimes muesli, but most often oatmeal with milk and bananas and walnuts. I definitely want to try these muffins though, I love muffins.

my son loves banana bread and eats it for breakfast most days. I have not tried oat bran flour yet. How is it different?

Love how there’s no funky ingredients or flours that I’ll never use again in these. I usually skip over those recipes no matter how tasty they look since I won’t bother to buy all those ingredients. Lucky for me, these ones will be made! Can’t say I may not add some chocolate chips though 😉
