So many great things going on. New strength training, new cardio, yoga progress and new recipes.
We’re getting closer to summer break and in a comfortable rhythm and routine right now. Getting things done and stressing less. It’s a breath of fresh air.
Anyone else planning a Cinco de Mayo menu? I could eat Mexican food everyday and never get tired of it. So, planning a Cinco de Mayo menu is fun and I use it as an opportunity to try new recipes and create my own.
The flavors and textures of halved grape tomatoes and avocado with cilantro, onion, garlic, lime juice, and sea salt make a perfect side dish or simple appetizer with tortilla chips. Gluten free. Vegan. Dairy Free.
Ingredients
- 4 cups grape tomatoes, halved
- 1/2 cup red onion, chopped
- 1 1/2 tablespoons fresh lime juice
- 1 teaspoon garlic, minced
- 1 jalapeno, diced (optional)
- 1 cup cilantro
- 1 avocado, diced
- sea salt and pepper to taste
- small handful cilantro flowers (optional)
Instructions
- In a large bowl combine tomatoes, red onion, lime juice, garlic, jalapeño and cilantro. Mix well
- Add diced avocado and cilantro flowers and toss gently.
- Add salt and pepper to taste.
Notes
After preparing, chill if not serving immediately.

This looks beautiful! But I gotta’ admit – I am not a tomato fan 🙁 I have tried so many wonderful tomatoes that my family assured me was like non other – but I still do not like them. The good thing though is that I have not passed on my tomato aversion to my children. They all devour tomatoes like candy and I serve them all the time I do love bruschetta tho! Once the tomato is marinated I can eat them, go figure!

Weirdly enough, cinco de mayo was not something I even knew about before I started blogging! Also, I think oats would have to be the one thing I can eat all day every day and not get tired of.

I didnt know Cinco de Mayo was coming up!! Mexican food is my absolute favorite, and if I had to say there was something I could eat all the time and never get tired of it would be: avocados, cherry tomatoes, beans, rice and cheese! All wrapped up in a wonderful tortilla haha.

Yum, yum, yum! That salad is perfect for summer and avocados are my favorite. I don’t think I would ever get sick of avocados but I don’t want to test that theory 🙂 We don’t have them in the house super often because they are so expensive (at least up here). I’m all over it when I catch them on sale for less than $1.00/each! Avocado on toast with a pinch of salt is SO GOOD.
From simple to detailed an avocado is always great in a recipe. I eat at least 1/4 of an avocado everyday. We’re spoiled with the cost of avocados. How much to they typically cost where you live?
I think I could eat them every day! Even our toddler likes avocados 🙂 Finally… something he actually likes.
Around here, they are generally $1.00+ per avocado. I buy them if I can find them under a dollar each! Hopefully they will go on sale this summer. Then I can try this salad out!
