Counting down the days until my son graduates. I’m not actually counting the days. That would make it feel like time is going by faster than it already does. It’s more checking off the to-do list and getting excited to have a house full of family.
Have an awesome Sunday!

Mm look at all those goodies! Looks like the theme is “stuffed” 🙂
YOu make the most amazing food! I want to come live with you and have you cook for me 😉
Sue I would love to plan a big blogger meet up and cook for everyone! You’re welcome any time and I’d be happy to cook 🙂
Great Meal Plan! Afternoon oatmeal sounds interesting! I love the idea of chia pudding, I think I will give it a try this week. I am liking cold foods a little more now that spring has sprung and the snow is gone!
Hi Jennifer, did you try the chia pudding? I love oats and the snack size is perfect in the afternoon.
The afternoon oats sound great. I need more snack ideas 🙂
Hi Jen. I love oats and the snack size is perfect in the afternoon.
Looks like a great planned week!
on your menu this week:
-grilled chicken, steak and salmon?
I mentally meal prep on Sunday but since my meat is grilled for the week it is more about what veggies I will pair my protein and carbs with.
I do you plan your workouts for the week to incorporate training runs and weight training.
Sounds like you set yourself up for success each week!
I plan our menu for the week but then do all of the prep as I go. Do I see hot yoga on your schedule. How fun!
Sandra, hot yoga is amazing! It’s been months since I’ve gone to a non-heated class. Have you ever tried it?
You’re working in quite a bit of elliptical with your yoga! How are you liking it? I feel like I’m too uncoordinated to use an elliptical – can’t get used to the motion or get in a rhythm. Good luck getting ready for graduation, too! Sounds exciting (and unbelievable – mine start HS next year, where does the time go?)
Hi Kelli, HS seem to have lasted half the time it actually lasted. It’s crazy how fast time flies. I’m loving having the elliptical as a workout option. I’m planning a post as we speak.
Happy Mother’s Day!
How exciting that he is graduating 🙂 you must be a proud momma! I always meal plan on sundays, and prep can be done on saturday and sunday, depending on the meals. As for work outs, I try and plan, based on my work schedule and time frame 🙂
I’m a very proud momma! Amber, he is such an amazing kid. Smart and one of the most compassionate people I know. Haha, it doesn’t take much for me to tear up lately 🙂
Hello Jill:) Graduation planning can be bittersweet- I will be planning a small gathering after my daughter graduates 8th grade this year. Sometimes I still wish time would stand still. Kids grow up too fast:( On another note- I love how you plan for weekly snacks! I need more healthy snack prep because I’m a ‘snacks’ kind of girl!
I’ve been menu planning including snacks for so long I can’t imagine not planning. I cry at the most random times when I think about my son graduating and leaving for college. It’s like it happened in the blink of an eye.
Happy Mother’s Day!
sounds like a great week! We fly home tomorrow from Nashville and I need to get ready for a 5K on Saturday at Bok Tower. It is part trail run and it is beautiful, so I will definitely get to yoga and a couple runs to shake out these legs! Have a great week.
so i will be over for dinner every night this week, sound good?! haha yum!
my door is always open for you!
Looks like a great week! I am definitely doing some meal prep today as after 3 months of unemployment I start a new job tomorrow! I am excited but it is going to be a challenge getting into a new routing and I figure meal planning will be a big help!
Congrats on the new job Betsy! Meal planning will quickly become your new routine.
