A Play On Patties
While St. Patty’s Day will be over by the time The Recipe ReDux rolls around this month, we’re celebrating the ‘patty’ all month long. We’ve seen images of stacked patties go crazy on food photo sharing sites like HealthyAperture.com; so stack ‘em up! Think healthy tuna burgers, potato patties, or veggie stacks.
Creating in the kitchen and loving it. When I thought about the March Recipe Redux theme of creating “patties”, the first ideas that came to mind were black bean and veggie patties because they’re both a favorite. Then, I immediately thought of my latest obsession with all things sweet potato and my love of nut butter.
I gave myself a starting point with wanting to use sweet potato, nut butter, with no added sugar or sweetener, gluten and dairy free and, voila, the Sweet Potato Apple Patties became the recipe I’m most proud of creating.
A pleasing combination of flavors and textures that everyone will enjoy. A dessert or snack that's full of nutrients and with the combination of flavors and natural sugars you will be amazed that there isn't added sugar.
Ingredients
- 1/2 cup gluten free rolled oats
- 2 tablespoons coconut flour
- 2 1/2 teaspoons cinnamon
- 1 large sweet potato, cooked and peeled (433 g)
- 2 large apples (I used Fuji and Jazz)
- 1 chia egg (1 tablespoon chia and 3 tablespoons water)
- 2 teaspoons vanilla
- almond butter
- homemade almond granola (optional topping)
Instructions
- Combine chia and water and let sit while preparing the other ingredients.
- In a bowl add the first 3 dry ingredients and stir until combined.
- Core and grate 1 apple (Fuji) and pat with a hand towel to absorb some of the liquid.
- Add the sweet potato, grated apple, chia egg, vanilla, to the dry mixture and mash until mixed well and all the dry ingredients are moist.
- Using 1/4 cup and 1 tablespoon, form 8 patties.
- Heat the coconut oil on medium heat being careful not to let the oil get too hot. Add the patties and cook 3 minutes. Flip and cook another 3 minutes.
- While the patties cook, core, peel and slice the remaining apple (Jazz) into 16 slices. Toss in a microwave safe bowl with 1 teaspoon cinnamon. Stir until the apples are coated. Cover with plastic wrap. Cook in the microwave for 1 minute. Remove, uncover and stir. Recover and cook an additional 30 seconds until apples are soft but not mushy. Repeat another 30 seconds if necessary.
- On a plate, add 2 patties and top with 4 slices of cinnamon apples. Drizzle with almond butter, sprinkle with granola (optional) and a dash of cinnamon.
- Serve immediately and enjoy while it's warm!
Notes
The patties taste great all by themselves. No toppings needed.
If family or friends are around be sure to make extra cinnamon apples. They will eat them leaving you without enough for the recipe!
As I type this I realize it’s more of a fall-ish recipe with warm apples and cinnamon. It’s just as well, I went on a run this morning with my husband and we had to wear pants, hats and gloves. So the warm snack was perfect despite the fact that it’s spring!
My daughter commented that you can’t even see the patties. So, I assure you the patties are in there under the apples, almond butter, cinnamon and granola goodness. Here’s my proof. And this shot is perfect for the fact that the patties are awesome without the toppings. Just grab and go.
I’m glad the photos turned out the first time. Before I knew it, with my husband and daughter close by, this was all that was left.
