Healthy Snacking – Pair It With In-Shell Pistachios
As soon as I heard about the opportunity from Recipe ReDux to enter a contest using in-shell pistachios I thought, given the fact that pistachios are one of my all time favorite nuts, yes! Then I thought, wait, a food contest? Professionals will enter. Amazingly creative foodies will enter. I’m way out of my comfort zone! What was I thinking? One, I was thinking yummy pistachios. Two, I was thinking it would be fun. And three, what did I have to lose.
You are challenged to pair in-shell pistachios in delicious ways.
In my typical excited-get-carried-away fashion my list of pairing ideas quickly grew longer than I would actually use. So, I then decided what I wanted in the end was a snack that is:
Simple * Delicious * Healthy * Kids Will Eat It
I knew in-shell pistachios are one of my (and my daughter’s) favorite nuts. I was also familiar with the heart healthy benefits. For the nutrition geek in me, What I didn’t know:
- Pistachios are considered the “skinny nut.”
- Almost 90% of the fat found in pistachios is the healthy mono- and polyunsaturated fats.
- There is a Pistachio Principle. Behavioral nutritional studies which suggest that consuming in‐shell pistachios may help to slow consumption while empty shells may serve as a visual cue about how much has been eaten. People who consumed in-shell pistachios ate 41 percent fewer calories than those who consumed pistachios without the shell.

Simple and Delicious Skinny Nut Snack
In-Shell Pistachios + Favorite Dipping Veggies + Greek Yogurt (approx. 5 ounces) mixed with 2 tablespoons basil pesto (store bought or homemade) + Strawberry Infused Water = Yum!
The verdict? Simple, delicious, healthy and my kids eat it!
