Summer Is the Season for Grilling

Last week I was totally preoccupied with an upcoming race and never sat down to finalize my menu. No worries. It will be done before the work week starts.

One thing about running an 12 hour even is what and how often I eat. It’s very different from my typical day to day eating. Significantly more sugar, carbs and calories. So as usual the week following a endurance event is light, minimal sugar and carbs and minimal cooking. Lots of veggies!

Summer and grilling go together like almond butter and jelly!

We finally bought a much needed new grill and the whole family is excited about the possibilities. We all think food tastes better when it’s grilled. There will be chicken, hot dogs and hamburgers along with a variety of tasty plnat-based recipes on the menu this week. The grilling season kicks into full gear just as the summer vegetable season starts to peak.

  1. We just got a grill, and tried it out for the first time this week. (Literally my first time grilling–ever!) It was a BLAST, and our turkey burgers turned out delicious. Thanks for these great recipes to try this summer. The first one (the salad) looks especially delicious. And I’ve been meaning to do some experimental work with eggplants, too.

    The corn & tomato fettuccine and the Long Weekend grilled salad are making my mouth water. We grill a lot of fish and chicken but tend to forget about putting the veggies on the grill (I always cook them inside while my husband grills) – gonna try to start adding more veggies to the grilling line-up.

  4. Those all look so good! I love grilling season especially grilled veggies. One of our favorite grilled meals to make for parties are grilled quesadillas. We prepare the veggies and meat in advance then everyone fills their own and we grill away! So good!

  7. I love grilled veggies, so easy to incorporate into any meal. We grill almost anything on the grill in summer: pizza, quesadilla, etc. I
