Favorites From A Vegan Menu

A few weeks ago I mentioned searching for optimal nutrition and remembering what makes me feel and perform the best. I think, I realized what happened and that a vegan menu actually does work for me.  Basically,  it was my efforts to get mega amounts of protein (probably more than I need) that left me feeling less than great and questioning whether a vegan diet was right for me. A little dairy and eggs here and there. Maybe more soy than I should have been eating. A little of this and a little of that added up to make a big difference! Throw in the occasional holiday  treats too!What did I do? First and foremost, out of the ordinary holiday treats stopped! I stopped over focusing on the protein, stopped eating dairy and eggs and went back to a total vegan diet with about 80% being raw.

I’m not exaggerating when I say going back to vegan made all the difference in the world in how I felt and I’m not questioning how I eat.

Note: I’m going as paperless as possible this year. In doing that I’m trying to figure out how the most efficient way to get my weekly menu from my iPad to my blog. So, for now my menu sharing will look like this:

Garden Enchilada Bake with Homemade Salsa
BIG Salad with Add-On Varieties
Roasted Vegetable Soup
Black Bean Ezekiel Wrap and Green Salad
Chili with Fire-Roasted Corn
Burritos with Mexican Style Seasoned Cabbage
Apples and Walnuts on Baby Greens with Poppy Seed Dressing

    Sometimes I think start to over think what I’m eating. While I’m not totally vegetarian or vegan, I do get hung up on the protein thing sometimes. It’s all you hear about in print, news, etc. so it’s hard to ignore. Great job in finding what works for you. You know yourself better than anyone. BTW – roasted veg soup – YUM!

      Hi Angela! I think that’s part of my problem…too much info! That and maybe I think the “experts” know me better than I know me. Hmmm…never thought of that.

    Everything looks so good! Especially the veggie burger. Yum! I still need to review foods for this week and put a plan together. I’ve been reading up on going vegan again and I got a special vehan surprise in the mail yesterday. :-)

    Tasty and healthy looking menu! I’ve really got into eating a lot of hummus lately. Last week I found a chile pepper hummus in a local grocery store…YUM!

    I am addicted to cherry tomatoes, baby carrots, and fresh green beans. They go to lunch with me every day. Oh and apples and clementines.

    Isn’t it amazing how much of a difference it makes when you clean up the extra treats? I noticed this holiday how much they pulled down my energy… never made that connection as clearly before. I’m glad you’re back to feeling good!

    I am constantly re-evaluating based on the bod & with age even more. I have found things I have been able to stick with for years & then some had to go… so important to listen to the bod! :)

      Agreed! I’m sure I will re-evaluate again. And again. Nutrition is relevant to so many factors and when they change it would stand to reason that nutrition needs might change too.

    itchy subject, but I never could figure how to keep my yeast/hormones in check on a vegan diet. We are approximately the same age and I wonder if you have had any issues with the same?

    I’m glad the vegan approach is working out for you again. I am vegan most of the time, but I have the odd egg now and then. I have been a vegetarian for so long that I don’t really analyze my diet much anymore for protein, etc. I don’t know, maybe I should. Sometimes I just want to enjoy my food though! :)
