My biggest challenge was a surprise…only having to plan for 3 days. I thought it would be easier since it was just a few days but I had a hard time finding healthy things to make for just the three days!

Such a good idea. We cook on the weekend so we have enough potatoes/sweet potatoes and beans for our breakfasts all week, but we’re not so good on the dinner part.

My biggest challenge this week was that I was traveling on the weekend, which is usually when I do most of my big planning/cooking. However, luckily I have a few freezer meals left over from last week,!!
