What’s For Dinner Menu Planning Challenge

Welcome to Week 1 of What’s For Dinner Menu Planning!

This challenge will last from today, September 30 until October 31. Every Sunday morning Mommy Run Fast and Fitness, Health and Happiness, will share our meal plans for the week, including recipe links and/or a new recipe. There may also be a bonus challenge to incorporate a specific recipe or ingredient into your menu.

Now for reason we’re all here. I plan my menu primarily with 2 things in mind. 1. I eat a vegan diet and my family does not and 2. I include on my menu anything that is going on in the evening that will affect dinner plans.

On the menu this week:

Monday – 5-7 Cheer, family visiting

  • Breakfast:  Green Monster Protein Smoothie
  • Snack: Edamame and Cranberries
  • Lunch: Spaghetti and Meatballs
  • Snack: KIND bar
  • Dinner:  Taco Night, L.A. Style Chimichurri

Tuesday – A.M. Yoga, P.M. Run, family visiting

  • Breakfast: Green Monster Protein Smoothie
  • Snack: Baked Oatmeal Protein Muffin Top, Green Tea
  • Lunch: Mediterranean with Nature Box Maui Onion Crunch Almonds Salad-In-A-Jar
  • Snack: KIND bar
  • Dinner: Chinese Salad, Fruit

Wednesday – A.M. Strength, Chad works late

  • Breakfast: Green Monster Protein Smoothie
  • Snack: KIND bar
  • Lunch: Asian Salad-In-A-jar
  • Snack: Vega All-In-One Smoothie (Vanilla Chai)
  • Dinner: Broccoli Cole Slaw Salad

Thursday – A.M. Yoga, P.M. Run, 6-8:30 Cheer, Chad works late

  • Breakfast: Green Monster Protein Smoothie
  • Snack: Baked Oatmeal Protein Muffin Tops
  • Lunch: Garden Enchilada Bake
  • Snack: Vega All-In-One Smoothie (Vanilla Chai)
  • Dinner: Mediterranean with Nature Box Maui Onion Crunch Almonds Salad-In-A-Jar
Friday – A.M. Strength
  • Breakfast: Green Monster Protein Smoothie
  • Snack: Edamame and Cranberries
  • Lunch: Spaghetti and Meatballs
  • Snack: Vega All-In-One Smoothie (Vanilla Chai)
  • Dinner: Smoky and Sweet Tofu Walnut Bowl

Saturday – A.M. Run, P.M. Strength

  • Breakfast: Protein Overnight Oats (Banana and Sunflower Butter)
  • Snack: Baked Oatmeal Protein Muffin Tops
  • Lunch: Asian Salad-In-A-Jar
  • Snack: Vega All-In-One Smoothie (Vanilla Chai)
  • Dinner: OUT
Sunday – A.M. Long Run, P.M. Yoga, 5-8 Cheer
  • Breakfast: Chocolate Protein Overnight Oats (Banana and Almond Butter)
  • Snack: Protein Smoothie (Chocolate, Banana and Almond Butter)
  • Lunch: Garden Enchilada Bake
  • Snack: Vega All-In-One Smoothie (Vanilla Chai)
  • Dinner: Make Your Own Pizza

Oh, and another thing. This week’s prize has been generously provided by Nature Box.

      Add-ins vary a little throughout the week but the basic recipe is 1/2 cup unsweetened almond milk, 1 scoop Vega Performance Protein, 1 tbs flax ground,1/2 frozen banana, 2 cups spinach fresh, and 2-3 cubes ice. Yummy! No. Linking up is not required but we’d love to have you join us :)
