What I Ate Wednesday || Running On A Plant Based Diet

It’s Wednesday so that means linking up with Jen (and 100+ others) at Peas and Crayons.

30-Day Plant Based Gluten Free Challenge update. Once I tweaked meal planning to make sure I’m getting the calories and nutrients I needed, the plant based diet, running and strength training are all coming together. The difference in how I feel has been much more so than I ever expected. Full update (pros, cons, tips, resources) coming soon!

 On the menu, Tuesday June 19….

Breakfast. Taking a break from my favored overnight oats with Breakfast Quinoa. Tried a few different fruit (and nut) combinations and the banana strawberry is one of my favorites.

Snack #1 of the day. My version of cinnamon toast. Ezekiel sprouted grain english muffin with almond butter, cinnamon and a sprinkle of stevia. Slightly heated so the almond butter is gooey! I can’t believe I hadn’t thought of this idea before now.

Lunch. Black Bean Burger (an new recipe from Skinnytaste without the Chipotle Mayo) with almond cheddar cheese on a bed of Southwest Quinoa Salad and greens. I’ve tried a lot of black bean burgers in the past month or so and this is my favorite.

Snack #2 of the day. Chocolate Shakeology.

Dinner. Martha Stewart’s  Mediterranean Chopped Salad.

Dessert. After dinner. Fresh strawberries! Just strawberries. Nothing else needed. I’m of the mindset it’s summer eat them fresh and at their best while you can as often as you can!

    Your day looks awesome and so well balanced. Despite the fact that I eat meat, I actually think I eat pretty similar to you! I try to get in as many fruits and veggies as I can in a day :)

    Oh Yum! I’m going to check out every single recipe you linked up there — your meals are so suited to my tastes! I’m definitely thinking the black bean burger and southwest quinoa salad might be something I make tonight – I have a bunch of tex-mex themed food that needs to be used up!
