What I Ate Wednesday || Vegetarian Style

Today is Day 16 of my 10-Day [and Now Beyond] Vegetarian Challenge. At some point I will stop referring to it as a challenge. Maybe after 30-days?

On the menu…

Morning coffee :)

Green Monster Smoothie
2 cups fresh spinach, 1 scoop protein powder, 1 frozen banana, 1 teaspoon cinnamon, 1/2 cup Greek Yogurt, 1 tablespoon chia seeds, 3 ice cubes

Homemade Endurance Crackers and Creamy Greek Yogurt Hummus.  Awesome snack!! The hummus is seriously the best I’ve ever made.

Broccoli Cole Slaw
2 cups, broccoli slaw, roasted walnuts, fruit of your choice (pomegranate this time) and homemade mustard vinaigrette

Green Monster Juice
2 cups spinach, 1 pear, 1 apple, 1 celery stalk, 1 tablespoon flax, 1 bunch kale

Baked Cauliflower Poppers. While making dinner we tried this new recipe (photo is before baking). Even my son, the pickiest eater ever, likes these! You can find the recipe at Delighted Momma.

Grilled Butternut Squash Pizza. This recipe would work with whatever squash is in season. A recipe from one of my favorite foodie blogs, The Healthy Foodie.

Yeah, I think after 30 days I can safely consider the challenge a permanent lifestyle change.

    So, you’re thinking of going veggie for good, really? I don’t think I could do it. I don’t eat much meat, but I still need to have it once in a while… especially chicken!

      Going veggie for good! I don’t miss meat, actually chicken because that’s pretty much the only meat I ever ate, as much as I thought I would. It takes 21 days to develop a new habit so I’m giving my challenge 30 days and I’ll see if I still feel the same way.

    That pizza looks great! I have never had pizza with butternut squash before! I have to go and try that asap!

    I was a vegetarian for about 15 years. I tended to eat a lot of starches and cheese. I think I would be a healthier vegetarian now!

      Hi Kyria. I’ve noticed that there is A LOT of cheese in vegetarian recipes. I’m not a big cheese eater so I avoid most of the recipes that have a lot.

      Hi Frances. I’m not exactly sure what it is specifically that makes it smoothy but I do know I’ve perfected the Green Monster!

      Maybe it’s the order of ingredients…liquid, powders, spinach, yogurt and fruit on top.

    That pizza looks AWESOME! Pizza is one of my favorite foods and have never tried it with squash. Genius idea! I’m not a vegetarian and have never considered going that direction, because I enjoy chicken, meat, etc. Glad I stumbled upon your site! :)

    I went veg about two decades ago- Tho now vegan about 95percent of the time… Never looked back and havent regretted a day. Dont rush to label yourself, the transition can take some time. Some of my favorite sites eith great recipes include peasandthankyou.com, hungryhungryhippie.com, choosingraw.com and whole foods own website is a great resource too. Glad you are enjoying such a great healthy lifestyle!

      Peas and Thank You has become a favorite site. I think you suggested it to me last week :)

      I’m not in a big rush for the label but I’m goal oriented and it’s just habit to have a target date.

    I was a vegetarian by accident. I just ate a lot of non-meat. Even now, I like soy chicken more than real chicken. :) Though I had soy shrimp and that’s just weird.

      I’ve never really been much of a meat eater and for the most part only chicken. I’ve never heard of soy chicken or shrimp. I have a lot to learn :)
