Fitness Friday || A Favorite Recipe

Welcome to Fitness Friday Week 32!
This week I’m sharing one of my all time favorite, quick and easy recipes. There have been weeks that I eat this every day for lunch or dinner.
Broccoli Slaw

A quick and easy meal with 2 servings of vegetables and 2 servings of protein.
Servings: 1
Prep Time: 5 minutes
Cook Time: 15 minutes
INGREDIENTS
- 2 cups broccoli slaw
- 6 oz grilled chicken chicken breast chopped or shredded
- 1 oz toasted walnuts chopped
- 2 tbs balsamic vinaigrette
- 1 serving fruit (pears, pomegranate, etc.) chopped
INSTRUCTIONS
1. Grill chicken.
2. Toast walnuts.
3. Combine all ingredients and toss.
4. Enjoy!
SUGGESTIONS
- 6 oz grilled shrimp also works well for this recipe.
- Choose your favorite fruit. I’ve tried pears, pomegranate and apples.

I love broccoli slaw!! Recently I started saving the stems of fresh broccoli to shred raw into my regular salads. Yummy!
